Can these be used to remove ceramic coating?

Probably if you use a mild abrasive like t cut .it's something I haven't tried . So try it on a small patch first would be my best advice

Can you use both sides of the towel on a car?

Yes definitely but pull the label off as these can scratch paintwork, not everyone notices but I have been fine detailing for 30yrs I notice :)
