Perfect.

Great product, helpful seller
I bought this for some Biltong I had recently made. The first package I received came in pretty bad shape as the wood had broken right on a joining seam. I can only assume this was during transport because the box was pretty badly damaged as well. It would have been an easy fix had I not already had a lot on my plate. I decided to take the easy route and ask for a replacement. There was a mix up with USPS and it took a little longer to get to me but so far so good. My early batch was a little dryer so it definitely got put through the ringer and the blade didn’t dull as I moved into the wetter biltong.Friendliness of the person I was in contact with: 10/10Over all function of the cutter: 10/10.Finish of the product: 9/10Criticisms: The clever handle that was attached on my product has a little bit of unevenness where the two wood pieces attach, it’s not a deal breaker by any means but I hope the seller can make the best product possible

Decent Meat Cutter
I make biltong at home regularly in batches from approx. 6lb of raw beef. Cutting this amount with a knife is not an option. I have a very sturdy cutter imported from South Africa, made from an African hardwood. Its interesting to compare the design and performance to the Billy Buckskin cutter. Firstly, my old one is a dedicated biltong cutter and does not work for cutting any other foods. The frame is extremely tough and sturdy to be able to cut thick, hard dry pieces of meat without flexing. Its blade is custom made and razor sharp. It will take a finger off before you realize its happening!Its frame has as water resistant coating and can be washed under running water. The blade cuts down onto a plastic block derived from kitchen cutting boards so food particles don't get lodged anywhere. The downside is, it only cuts narrow strips of biltong (see photo).The main reason I got the Billy Buckskin cutter is to be able to cut wider pieces of meat and to use as a universal cutter - Like a food guillotine. The build quality is good, but the oak frame is too thin and the wood is raw so it cannot be used under running water. It will need regular oiling to prevent the wood drying out, warping or cracking. The blade is derived from a standard meat cleaver with the hinge smartly fashioned to use the hook hole in the blade. Because of the screw and wing nut design, there is some sideways play in the blade, which will become an issue when trying to cut the thick, hard and dry pieces especially if they are are wider. The blade is also not razor sharp like the custom stone honed blade on my old cutter. I tested he Billy Buckskin cutter by cutting cold meats, cheese, biltong and even a loaf of banana bread . It cut all of them cleanly.Due to the blade width and pivot point of the cleaver, it's necessary to lift the handle almost vertical, to get sufficient height for thicker foods. I also noted that the rebate in the wood base, where the blade cuts down has a tendency to accumulate food. This required hot water to clean properly and could become unsanitary with time.Overall its a good cutter with multiple uses. It will work for occasional biltong cutting, however long term durability may not be that good if cutting hard meats.

Sharp knife but cutting board can be improved
The woodcutter board came split in half; after reaching out to customer service, a replacement board was quickly sent.The knife blade is very sharp, and the handle is pretty smooth.I like the fact that with the knife secured to the stand, I can focus on holding onto the hard-to-cut food item to be cut and sliced, without fearing and running into the possibility that the knife will shift (not stay vertical at the food contact) and cut my fingers.It is also great that the knife is removable with a simple few turns of a wingnut.With that said, I wish that the woodcutter board can be a little bigger. The cutting board is 8.75" x 9", and the knife is around 13" including the handle.
