Q: I’d like to build a medicine cabinet behind two of these and use them as doors. Is it possible to mount these that way?

The cord comes out the center of the back, then has to be directed to one of two notches where it can come out the long or short side of the back frame while against the wall, so you can plug it in right next to it. Alternately, we drilled a hole in the wall behind to hide the cord and route it inside the wall to inside the vanity below. But I'm not sure how you'd manage the cord if it was a hinged door. Hope that helped.
