Whenever I go and click the control panel to check the PM’s they randomly start rising rapidly, why do they start off at 18 then skyrocket?!

Probably because by moving closer to the unit, you are stirring up dust or maybe some particles are coming off of your clothes. The PM 2.5 sensor detects the a higher concentration in the air and speeds up the fan (PM stands for Particulate Matter) The sensor can detect particles that are too small to see with the naked eye.
