will the point trackers fall out if I turn the board upside down?

No, its a three layer piece including the dials so that a larger circle is placed in before the top layer of the board is so it fits securely no matter how you hold it. I do recommend going over any moving parts lightly with some sandpaper so that it turns more smoothly but otherwise you wont have any problems.

What are the size of the player sheets?

If you are playing the original gloomhaven the player card will fix just fine. If you are playing gloomhaven “JOTL” the card is set up differently but it still fits just not the same.
