UMAi Well Done Again
I been using UMAi bags for some time now making salumi, charcuterie. I just got these fibrous casings to make some Summer Sausage. I'm sure they will be top notch just like the other UMAi bags. Also UMAi has a line of spice blends for salumi, pre made measured salt/cure 2 packets for a perfect 5lb batch of great UMAi salumi. With the UMAi bags you dont need to worry about fancy controls for temp/humidity. Mix, stuff, hang to ferment (salumi) then on a wire rack in your normal household fridge. Perfect salumi.The new Stuff Tuff fibrous casings are for your smoker or oven at the lowest setting.I will say that I have never had a problem with the UMAi products. Bags, and instructions are very user friendly for the beginner. Stop by the UMAi web site and look around. Lots of videos to watch.

It Was Fun.
This was the first time stuffing a casing. My salami came out great from my smoker. each casing held about 2 pounds.I found out later that could tie them in the middle to make 2 pieces.The cable ties did not get very tight. I should have ordered the 10 inch, casings the would be easier.I stuffed them with a neck of a soda bottle and used the end of a spoon.

Bologna
I made a pork/venison bologna and was able to stuff these casing, smoke and cook the product. Turned out fantastic and will order more in the fall prior to hunting season.

Top-Notch product here!
I'm already a big fan of Umai, as I've used their dry bag products several times, for dry aging beef and making sausage and charcuterie. The quality here is Top-Notch!Thought I'd go "Old School" and give this a go. Planning on making a smoked summer sausage and I really like the fact that these casings are pre-poked.
