I’m also someone who enjoys cooking gourmet foods that regularly have beer or wine in them. I’ve learned a great trick for wine, and this will now be part of my arsenal for anything requiring beer. I recommend replacing the same amount of liquid in the recipe, and here is how I prepare one cup of it. 1 cup of beef broth, 1/4 tsp of the barley malt syrup, and 1 tablespoon of your favorite vinegar. Mix well and add to the recipe. Sure, you can just add the broth, but it can sometimes leave the meal tasting flat. I tried this method in my instant pot where I made a shredded beef for tacos with ancho chili powder as the predominant flavor. It turned out great. Now I’m going to start making recipes that call for beer and not worry about jeopardizing my sobriety. Hope this helps you out.
