oat flour instead of rice flour is what makes this work. most gluten free pancake mixes have that gritty, slightly gummy texture and a bland taste. these come out fluffy with a mild nutty flavor from the oats and honestly nobody at the table has commented that they're gluten free.10g of protein per serving is the other reason we keep buying it. regular pancakes are basically dessert and everyone's hungry an hour later. these actually hold the kids until lunch.the batter comes together fast, no resting time needed, and it cooks evenly without burning before the middle sets, which some alternative flours do. works well in the waffle iron too, they crisp up properly rather than staying soft. buying two at a time makes sense since we go through it on weekends. good pantry staple.

Mrs Jones used to have an oat flour pancake with unfettered in it. This is very good...not as good, though.

If you are gluten free then PLEASE TRY THIS! It is so good. I used dairy free options in the mix. Added some dark chocolate chips and it was delicious. Thick, delightful pancakes. For being gluten free, the cost is reasonable. It’s easy to use and cooks quick like other pancakes.

This was the only Miss Jones product that we ever hated! Their customer service is top notch though! Will always buy this brand, just not this item!
