what size should i get for my 7 yr old?

If you go to eichlers site they have a sizing chart that I've used in the past to determine sizing for my son and husband.

Are the tzitzit strings wool or polyester? Are they placed and tied by hand?

The strings are wool and are tied by hand in order for it to be kosher.

Do these contain a blue thread as Torah commands?

No And it’s not known today what is the real blue so white threads are fine

All Zion Judaica products are made in Israel and kosher the company is located in Brooklyn NY you can go to their website for other products very good company I've bought many items from them and never disappoint me
