Pistachio Pesto

I recently spent time in Italy eating a terrific brand of pistachio pesto . . . and I was hoping this brand would be good, because foreign products for export are not always wonderful, as I recently learned with another European item. But this stuff is delightful, with a distinct nutty edge to it that may surprise you. Don't expect "pesto" with basil and garlic and cheese; this is a smooth pistachio paste with a layer of very crunchy, tasty pistachios. Eat it on crackers, add a tad to a bowl of soup, splurge and put it on pasta -- or just close the blinds and scarf it down with a spoon. I suggest pouring off some of the oil on top when you open it, as stirring it all in made the pesto a little thin (for my taste); use the extra oil in a salad dressing. If you have roommates, hide the jar 'way in back of the refrigerator.

Delicious spread

I had previously ordered this product and even though I found it to be more oil than pistachio, I enjoyed it. I added a little of my own cashew butter to it for better consistency. However, when I ordered the second jar, the quality control was terrible. There was even more oil and much less pistachio. There was a bit of a bitter taste to it due to the pesto which was also present in the first jar which I didn't mind. When I contacted the company to complain about the issue with the second jar, I was politely dismissed as being too much of an idiot to know that I must stir it. When I insisted that most of the jar was all oil with barely a tablespoon of pistachio, I was offered HALF of a refund. I insisted I wanted to return it or receive a FULL refund. They should have accepted the return so they could see for themselves that the ratio was WAY OFF. Company finally relented and said they would issue a full refund and to give Amazon time to issue it. After day 4, I had to call Amazon myself to get my refund. Amazon customer service is the best! I will not buy any other products from this company. Neither should you.

Love the pesto! It's awesome! However, the last 2 have been shipped in in a mailing envelope (see pic). Yesterday's delivery was broken since there was no actual protection of the glass jar. I got a replacement delivered today. This time it was the same packaging. It was broken but it was leaking oil from the jar that seemed to be slightly opened. Very disappointing for an expensive jar. It used to be shipped properly, but not sure why it's packaged like this now. Unacceptable!

This is a rich and extremely tasty pest! YUM! It was discovered at an excellent Italian restaurant in Paso Robles, CA. Happily, we discovered it on Amazon, so Voila! We use it regularly.

The jar I got either sat on a shelf for a long, long time or contains cement as its main ingredient. No amount of shaking would ever even slightly blend the contents. It was so congealed at the bottom of the jar that oil spilled several times as I tried to free the mess. The taste was fine; I just can't get it into a usable form.

I really expected much more flavor. Loved the idea, just thought it was a little bland.
