Q: how's the fit for a diabetic

They are great once the leather softens up the gel on the insole is great. I recommend for diabetics there great

Q: Do these function as exercise / workout shoes?

I would say no there a little heavy for working out and not very pliable but comfortable good for walking

Q: Are the insoles removable? I would like to use my Superfeet insoles instead.

I don't think so; they seem to be glued in. just out of 3 months in hosptal, and the memory foam is good for me for now. i have been wondering about Superfeet insoles though, but not certain if i would be able to work out the soles later..

Q: How is the grip on the bottom? I am ordering these for a disabled man.

The grip is fine no slipping at all!
