Cuts meat Won't cut a bullet in half mid flight
Super sharp out the box. I was a little skeptical about the handle. Most of my knives have wooden ones. I used it to trim up a pork shoulder and brisket. Performed well and felt good in my hand. I think I have found my new go to knife brand. I am not a pro chef or uppity hime cook. Might be cool to have a knife hand forged by samurai with German steel. I just want something that gets the job done. Great value.

Works well, but not the sharpest
The size and shape work well and it is comfortable in the hand. I mainly use it to trim brisket, but It isn't as sharp as I expected. Seems like decent quality, especially for the price. I wish it came with a blade cover, but for the price I can't complain too much.

Very sharp and easy to use
It's nice owning a great quality boning knife. This Mercer has made trimming different cuts very easy and precise. I've used it about a dozen times this month and it's still holding a good sharp edge. Handle has a great ergonomic shape and grip.

This Knife is a Revelation
I am delighted with this purchase. It arrived razor sharp and ready to go and within moments of using it to trim and slice an entire pork loin, I realized it outperformed my beloved legacy carbon steel boning knife in almost every way. It has an incredible edge and the tip is extremely fine, making it perfect for getting underneath silverskin and hard fat, peeling them away. There is some flex in the blade but it's not a filet knife and that's fine by me--in addition to pork loin and beef tenderloin, I'll be using this to break down whole chickens, and i think the balance of flex and strength is just right. To me, this is a very well designed knife that's been built well and thoughtfully--the ample handle gives it excellent ergonomics, enabling it to be both strong and precise. Getting this much knife for this kind of money is a revelation. Can't wait to get my hands on the Mercer 10-in. breaking knife.

Great inexpensive knife for trimming meat, nonslip handle works great even wet.
Fantastic knife for trimming brisket, it's inexpensive, easy to sharpen with a cheap carbide sharpener (so no needing to deal with whetstones). The handle is solidly made and is not slippery even when wet. I'm not sure that this will last forever, but for the price...I'll buy 2 more when it goes.

Good bonding knife
Great little boning knife, especially at the price. Shaving sharp out of the box, but with a fairly robust feeling blade. Easy to get in between bones and take meat off. Handle is nice and grippy. Probably wouldn’t be very good for other use (eg vegetables), but I have other knives for that…

A good stiff boning knife
You need to know that this boning knife has almost zero flex, which should have been elucidated in the product description. That being said, it's an excellent knife: a perfectly-shaped non-slip handle attached to some screamingly-sharp, high-quality steel that doesn't yield. There are ranges of flexibility in knives to suit their purpose, and this is meant for your more robust cuts. It'll handily handle a hock of ham. It'll breezily bisect beef and bristle. If you're looking for a good stiff boning, Mercer meets your meat's needs nicely.
