Perfect for cookie dipping.
I use this chocolate to coat the bottom of homemade digestive biscuits (cookies). Using the microwave I heat the chocolate for 30 seconds, stir, 15 seconds, stir then 10 seconds followed by stirring for as long as it takes to just melt the chocolate. Then I put 1 Tbsp ( it isn’t really 1 Tbsp because some chocolate always stays on the spoon) on parchment paper and set the 2.5” or 3” completely cooled cookie on top and push down until the chocolate just shows at the edge of the cookie. Leave for 30 minutes and the chocolate dries to a very solid layer. It just peals off the parchment and looks perfect. The chocolate isn’t too sweet and it is easy to work with and store. I freeze my cookies and the chocolate stays perfect. Started with a 2 lb bag but just ordered a 5 lb bag because I am now addicted to digestive biscuits. The two pound was enough for about 60 cookies.

Great taste and molds well.
Melts great. Taste delicious. Molds well, maintaining shape, shine, and firmness once cooled and set. The dark cocoa tastes like a mix of semi-sweet and dark chocolate. Hint…You can help identify authentic Merkens’ chocolate by comparing the ingredients…

Known Quality.
Obviously, we use a lot of chocolate. We don't buy 10-pound bags without knowing the quality. Merckens is first quality for candy making in our opinion.

Easy to work with but lacks the flavor and texture of true chocolate
I just found out about different kinds of chocolate, and not-chocolate, recently and decided to give these melting wafers a go to see how they compared to actual chocolate. Not needing to worry about working temperatures and tempering of traditional chocolate is an alluring quality. The ease of working with these melting wafers does come at a sacrifice to flavor and texture compared to real chocolate, though what you get is still pleasant tasting. I first got into chocolate making by going all out and making my own chocolate from scratch starting with cocoa butter, etc. and I have loved the results but it takes a lot of time and effort. I wanted to try working with melting wafers at the complete other end of the spectrum as far as being quick and easy goes. It was amazing being able to do everything in just a few minutes basically versus the hours I can spend making my own chocolate. I do miss the taste of real chocolate, and what I made didn't feel as lovingly made, but it was quick and easy too. I think this stuff is cool to have and I'll find uses for it as I explore different kinds of chocolate-making and finding the right product to use in different situations.

Good for dipping
These melted well and tasted good. Have to slowly add some oil depending on the consistency you’re looking for.

Make your chocolate dreams come true!
Bought the 10 lbs of each white, milk, and dark chocolate varieties and they worked very well for coating. Bear in mind, each type has a different tempering/hardening point and a kitchen thermometer is very helpful. Used it for chocolate covered everything - pretzels, krispies, strawberries, Oreos, cake pops, truffles, popcorn - you name it! Even used it in a chocolate fountain. It was so much chocolate for me as a home baker I got burned out on using it. Great value for the money at the time as store bought prices were outrageous.

Do Not buy from this seller!
The seller ships this expensive chocolate with no temperature control and then will not refund your money whenever it arrives completely melted. They shipped it to my house in Louisiana during summer hundred degree heat outside of course it arrived melted, but they will not back their product or refund my $70 for their melted chocolate that is unusable. do not buy from this seller.

Smoothness is questionable
I just used these melts to make chocolates and wasn’t satisfied with how well it poured. The chocolate was a bit grainy and poured in clumps. I couldn’t use this chocolate for what I bought it for which was pretty disappointing.
