How many bags of stones would I need for a 5 gallon tank?

You could use ziplock sandwich bags to measure. Arrange them at the bottom of the tank. That should roughly tell you how many bags are needed to cover the bottom... double (or triple) the amount of bags for your desired height. If I was to guesstimate, I'd say between 25-30 bags depending on how high you want it. 4 bags of the rose stones could be closely measured to a 2lb bag of aquarium gravel.
