Spray mini cheesecake pan with cooking spray. Set aside.Prepare crust by combining all crust ingredients in a small bowl. Mix to combine with a fork. Add one rounded tablespoon of moist crust crumbs into each mini cheesecake space. Use a small bottle (such as a spice bottle, or a shot glass) to press down the crumbs, to form a crust. Bake for 6-7 minutes, then cool completely. In a small bowl, add 1/4 cup sifted pumpkin powder. Whisk in 1/2 cup milk until well combined. Add pumpkin pie spice and mix. Set aside. In the bowl of a stand mixer, add Cheesecake mix and remaining 1 1/4 Cups Milk. Whisk on medium speed for two minutes. Scrape down bowl and add in the pumpkin mixture. Mix on medium speed for two more minutes. Spoon mixture into prepared crusts. Refrigerate 2 hours or until set. For clean/easy removal, freeze for 1 hour before releasing from pans.Decorate with whipped cream, toffee bits, pumpkin pie spice, or whatever you like.
