Will these work for scooping ice cream?

They will, but the ice cream cannot be frozen rock solid, or the scoop will struggle to carve into the ice cream, just like any other scoop!

What is the best size for cookies?

I do not use that scoop for cookies. I use it to fill cupcake cups. I think it’s too large for cookies. I use a Pampered Chef brand cookie scoop, personally, for cookies. I have two sizes, one holds about a tablespoon and the other is a little larger and makes larger cookies. My “go to” is the smaller one. Chocolate chip, oatmeal, and other drop cookies are about 3” across with the small scoop and about 41/2 to 5” when I use the larger one. I like them for uniformity. And my cookie scoops are all stainless steel, no plastic. Hope this helps.

What is the best scoop for cookies 24, 30, or 40?

The one with the yellow handle is 1/3 cup. It made 15 cookies--real BIG ones! If you want 24, I suggest the 1/4 cup size and they will still be large.

A MUST HAVE FOR ALL COOKS!

OH Boy! Am I glad I purchased this cookie scoop set! Keeps your hands clean while forming cookie dough and the different sized scoops are a plus. I’ve been using the small one for my chocolate chip cookies and they look and taste wonderful! Started using for oatmeal raisin cookies too! The scoop makes them the perfect size for freezing (and tasting when no one’s looking)! I can think of lots of uses from meatballs to ice cream! They are made well and came packaged separately in the same box - no scratches or damage. The scoops are a must for any one who loves to cook and bake. Don’t know what took me so long!
