BE ADVISED: although the the photos in the Amazon description show some space above the 30-quart line, those photos are NOT accurate; there is NO margin above the advertised size. In fact, the "30 quart" will OVERFLOW at a bit less than 30 quarts, right about 28 liters (the 24-quart, which I returned, is similarly misdescribed.) The pots are NOT as tall at the rim as is shown; that's actually the height including the lid with its handle. If you're going to come anywhere near needing the capacity listed in the name, you MUST buy the next larger size. **Q: Can I sear meat in it first, for the stew or will it stain the bottom?** A: I do, I haven't stained it yet.
