Any special instructions for sharpening these blades?

The best way to sharpen a carbon steel chefs knife is a ceramic rod. you will slide the blade at an angle forward, and it will shave off minuscule amounts of the blade. it will shape a blade new. Your kitchen might already have a knife block that comes with a steel sharpening rod. on this rod, you will pull the blade backward. This will not remove material, but reshape the blade. I yet have to sharpen any of my carbon steel knifes, but do it per 15 minute of cutting on my softer blades.
