Each honey crystallizes differently (it depends on the type of honey, its type and the method of storage). The amount of glucose affects the speed and ease of crystallization, therefore rapeseed honey crystallizes and changes into "butter" the fastest.My honey didn't crystalize as I simply know how to use it...
