Excellent choice for Omlettes
I am a huge fan of Cast Iron pans. However, my family loves omelettes in the morning and making them in cast iron was a bit of a pain. While the cast iron did a good job, I was having trouble being consistent with the omelettes. If I didn't use enough butter, the eggs would stick. If I cooked just a couple of seconds too long, the eggs burned... consistency was a problem. Likely a chef problem, not a tool problem, but I'm blaming the cast iron anyway!!While on the computer one night I tried to figure out what pans Waffle House used for their omelettes. They are the epitome of consistent with their omelettes... no matter where I go or what type of omelette I order, they always end up the same.I found that this Eagleware pan was either the exact model that Waffle House uses or pretty close to the one they use, so I ordered one to try it. It arrived quickly (love Amazon!) and I seasoned the pan before first use. Search for "how to season stainless steel pan" and use flaxseed oil when seasoning and you'll love the results.Anyway, after seasoning the pan, I started cooking omelettes and have had a great experience every time. Just be sure to preheat the pan first and then put in your cooking oil (I use butter) to preheat it as well, THEN put in your eggs. No sticking at all and the omelettes turn out perfect every time!Extremely pleased with this pan!

Seasoned twice eggs still stick.
Used salt with paper tile to rub skillet like waffle house does then removed grey salt, then added butter oil to about 3/4 of pan cooked on low heat for 30 minutes just oil. After first use and wiping it clean , the pan sticks again.

WON'T SIT LEVEL
THE HANDLE IS TO HEAVY FOR THE PAN , IT WON'T SIT LEVEL ON THE STOVE EYE

Best Egg Pan I have owned, Highly recommended
Best Egg pan ever, bought this for cooking Eggs, when seasoned properly the Eggs slide around like on a cloud, Take the time to season it according to the included instructions and care for it in a way that retains the seasoning and you will be very happy

Awful
This pan isn’t worth the cardboard it comes in. I would send it back if I hadn’t seasoned it and tried to cook on it for days. Gave it multiple tries with no success. Will be going back to my other pans.

Not Worth It
This Waffle House pan is not worth $40 for the Home Cook. Very lightweight. Bottom eagleware stamp shows through to the cooking surface- so you know it's thin. Machining is rough and crude for a $40 pan. Shipped with a ladle, no packing whatsoever so the pan was scratched.
