What exactly are tukmaria seeds?

Tukmaria are the small black seeds of the sweet basil plant, also sold as sabja or falooda seeds. They are cleaned, sieved and packed as seeds and nothing else - no fillers, additives or bulking agents.

Stir a spoonful into cool water and wait about ten minutes. Each seed triples in size and grows a soft translucent coat. They are ready within the hour.

Do they taste of anything?

Barely. The flavour is mild, clean and close to neutral, so the seeds simply take on whatever you put them in - lemonade, rose milk, iced tea or a fruit dessert.

How are they different from chia seeds?

They swell more and faster and give a softer, chewier bead rather than a gel. You generally need noticeably less tukmaria than chia for the same effect.

What can I make with them?

Falooda is the classic, along with nimbu pani, rose milk, iced teas and smoothies, and they are lovely in overnight puddings, yoghurt bowls, fruit salads and jellies wherever you want soft texture.
