Q: How long will the scoby stay good in the bag without opening?

Q: The honey use by date is 1 month past it’s date is it still good?

They have found honey in the pyramids from over 2000 years ago that they said was still good. I don't really know that honey goes bad but for the money you paid, I would return it. If your Jun doesn't turn out like you hope, you will always wonder if it was because of the honey. I thought that this process was actually way more work than I had anticipated (after seeing it on youtube) so it will be discouraging to go through all the steps and not have a good product in the end. If you are going to do it...DO EVERYTHING RIGHT...and use only the best ingredients within the "use by" dates..that is my opinion. good luck!
