Superb
The best texture in baked goods I've experienced with any gluten free flour. Love the nutrition of the fonio. Pleasantly surprised how well baked items hold together without containing xanthan gum. So sad I had to give it up since fonio is not recommended for low thyroid conditions.

soft fine grain flour
Made the pancake recipe on the back of the bag. They tasted okay then I added a tablespoon of sugar and they tasted very good. The flour itself has a grayish cast to it and a mild flavor on it's own. I have a wonderful recipe for chocolate quinoa crepes and that will be my next project to make them with this flour.
