Is this compatible with the canon AE1?

Though I don’t know specific model AE1, as long as camera is a 35mm film camera, Ektar 100 will work. Excellent film, slow speed, but rich in color and depth.

Are these compatible with the kodak ek4 instant camera?

No. This is 35mm film. The EK4 is an instant camera similar to a Polaroid.

Do you have to place the iso on 100 for the camera or can the iso be changed to 200 or 400?

Yes. Shooting a 100 ASA film at a higher rating is called 'Pushing'. Your average budget processing lab Will Not be able to process it for you though. You will need a pro level lab and you must tell them it has been exposed at the rating you shot at.
