Question for manufacturer. why use xanthan gum as a binding agent? isn't flax/chia a safer and natural agent for us humans?

Xanthan Gum is a soluble fiber, naturally derived from sugar through a fermentation process. It is deemed safe for human consumption by the FDA (https://pubmed.ncbi.nlm.nih.gov/14538095/). Although other thickening agents could be used, xanthan gum was selected based on its widespread use and proven safety in the food and cosmetic industries as well as lack of negative interactions with other ingredients in the formula
