Not as described AT ALL!
While cleaning these for making sopressatta tomorrow, I noticed these casings bursting quite a bit. As I progressed through cleaning them I also noticed that they are not 5 7-foot long pieces. More like 2-3 foot pieces. Also the diameter is way bigger than described! Now I’m in a scramble to find the sheep casings that I should have ordered to begin with!

Perfect for soft salamis
Work well, give a little funky to the salami, which is perfect! Size of finished product can vary greatly, not so with beef middles, but that makes it interesting....

Wavy, ruffled casing for ugly salami
This casing will not give you the smooth, straight salami. These are the ruffled intestines and you need to be careful when stuffing them to avoid air being trapped inside. It is easy to miss trapped air when you have to move/guide the casing trying to follow and fill the natural bulgings of the large intestine (colon.) What I understood from the description these were the ileum (lower part of small intestines as it was described as "hog middles") and not the colon. Even the picture of the product is misleading. Use beef casings for salami.
