Review: Great budget Japanese style knife - The MITSUMOTO SAKARI 5.5-inch paring knife has quickly become one of the most used tools in my kitchen. It strikes a perfect balance between traditional Japanese craftsmanship and modern ergonomic design. What’s to Love: Exceptional Sharpness: Out of the box, the 3-layer 9Cr18Mov high carbon steel blade is incredibly sharp. It glides through delicate fruit skins and firm vegetables like garlic and shallots with absolute ease. Superb Maneuverability: The 5.5-inch blade is a sweet spot for precision tasks. Whether I’m deveining shrimp, coring strawberries, or making decorative garnishes, the knife feels like an extension of my hand. Comfortable Ergonomics: The octagonal rosewood handle is a standout feature. It’s lightweight and well-balanced, which significantly reduces hand fatigue during long prep sessions. It also has a natural moisture resistance that ensures a secure grip even when my hands are wet. Stunning Presentation: It arrives in a beautiful sandalwood box, making it look much more expensive than it is. It would make a fantastic gift for any home cook. Things to Keep in Mind: Hand Wash Only: Because it's made of high carbon steel, this knife requires immediate drying after hand washing to prevent rust. Avoid the dishwasher at all costs. Delicate Blade: This is a precision instrument, not a heavy-duty cleaver. It excels at fine work but isn't meant for hacking through bone or frozen foods. Final Verdict For the price, you’re getting a high-performing, aesthetically pleasing knife that rivals much more expensive Japanese brands. If you do a lot of detailed vegetable and fruit prep, this paring knife is a worthy investment for your collection.
Review: Quite the bargain for a solid Japanese kitchen knife! - I got this for 30 something bucks on a deal. Frankly I like it a lot more than my Miyabi that I just got. I sliced through an white onion like it was nothing. I appreciate the storage box as I have yet to get a knife roll. If this knife holds up better slicing carrots than the Miyabi utility knife or my Shun Nakiri, this brand will be my go to for replacements. I definitely like this better than the heavier German knifes I had been using before.

## Features

- Japanese Paring Knife: The 5.5-inch paring knife is sized for peeling, trimming and detail cuts, helping this Japanese fruit knife handle apples, citrus, strawberries, garlic, herbs and small vegetables with precise hand control.
- Fruit and Vegetable Prep: This small kitchen knife works well for fruit peeling, vegetable trimming, seed removal and garnish work, giving home cooks a compact peeling knife for tasks that feel oversized with a chef knife.
- Petty Knife Control: Inspired by a Japanese petty knife, the compact blade helps guide short cuts around curved fruit, tomato stems, garlic cloves and small ingredients, supporting cleaner prep without using a larger kitchen knife.
- San-Mai Hand-Forged Steel: The 3-layer 9Cr18MoV high carbon stainless steel blade is hand forged and heat treated to about HRC 60±2, helping this Japanese knife balance hardness, toughness and a stable cutting edge.
- Rosewood Handle and Storage: The octagonal rosewood handle helps guide grip orientation during peeling and trimming. The sandalwood box keeps this Japanese kitchen knife neatly stored between uses.
