Excellent Heat Performance and Thoughtful Design
I upgraded from a cheaper stainless steel saucepan that struggled to heat quickly, and the difference is night and day. I chose this saucepan because I already own another piece from this line and have been impressed with its quality and performance. It heats up rapidly and distributes heat evenly, thanks to its copper core, making it perfect for everything from boiling water to simmering delicate sauces. The dual handles are a practical touch, providing a secure grip and balance of weight distribution when lifting a full pot of soup or sauce, and the flared edges ensure drip-free pouring. The craftsmanship and performance are exactly what I expect from a premium piece of cookware, and it’s a stylish match for the rest of my collection.

Most often used sauce pan
If you're on the fence trying to decide between the 1.5 qt and 2 qt . . .I own both and honestly wish I'd passed up the 2qt.The diameter of both pans is identical . . .but the lower sides of the 1.5 qt make this pan so much easier to use when coking things that require a lot of stirring and capacity difference is negligible.The copper core interior of these pans will cause water to boil away faster than other All Clad lines. I am in the process of replacing my older LTD with Copper Core, so have those to compare it with. I haven't boiled one dry yet, but can see how this could easily happen. As a result, I've changed some of my cooking habits to accommodate the copper's attributes. For example, I used to hard boil eggs for 15 minutes . . .the 1.5 qt holds 7 eggs. I put the eggs, covered with water on the burner and bring to a boil, then cover with the lid and turn off the flame . . .after 20 minutes, they're perfectly hard boiled.As for the Copper Core line itself . . .there's a reason Julia Child adored her copper pans so much . . .there's simply not a more heat reactive metal in the world. If cooking on gas or induction stove, the copper reacts immediately to change in temperature. I put 2 cups of water in both my LTD and Copper Core 1.5 qt sauce pans for a side by side comparison. With burners set on medium heat, brought both pans to a boil. The Copper Core pot beat the LTD by 47 seconds. No, that's not a lot of time, but does demonstrate how much quicker the copper interior reacted to the heat when first turned on, then the LTD with its aluminum core.Couldn't be happier with my purchase and highly recommend this line to experienced cooks who can appreciate the difference better cookware makes. Can't promise it will make food taste better, but can promise the cooking process will be more enjoyable in excellent performing cookware.***Update August 7,2014***In addition to the 1.5 quart I reviewed here, I also purchasd the 3 Qt . . .paid $245 via Amazon Prime on March 5, 2014. I returned here, 5 months later, to purchase a second 3qt . . .only to discover the price has risen $70?!?! I'm glad I purchased when I did . . .and certainly won't be adding another at this price. Great pan . . .but unless I missed the "Great Pots & Pans shortage of 2014" then maybe there really is sky rocketing inflation, in spite of government figures claiming otherwise.

What’s to Say About the Iconic All-Clad Copper Core Saucepan Except…well, except for one other or two other brands or cookware that are more commercial-kitchen oriented and cost two and three times the cost of the All-Clad Copper Core cookware, this is without a doubt the finest stainless steel cookware one can have in their home kitchen.It’s iconic and has been since the 1970s. And the copper core line is truly exceptional. It’s pricy but worth every penny—or shall I say dollar. The quarter-inch copper core adds a great amount of weight to what would otherwise be a D-5 pan. Copper is essentially heavy. This is a 5-core pan. Two layers of stainless steel, two of aluminum and the center core of copper. And that copper core is very visible.Because one can actually see the copper core it shouts ‘I’m an All-Clad Copper Core Saucepan. I’m expensive. My owner paid a lot of money for me. He/she appreciates great cookware.’ And it’s true. One does not spend $250 for a saucepan lightly. In my case, I thought about it for over two years before I decided to do just that. But once I did and justified my action, I never looked back.The only thing anyone has to do is to learn to cook anything in this pan. It gets hot very quickly. That’s because of the copper. It also get’s hot evenly across the bottom of the pan. That’s not as important in a saucepan as it is in a skillet but it is still vital to know and understand. But because it heats both quickly and from side to side evenly, you don’t have to cook anything in the pan on as high a heat like in a regular stainless steel pan.It’s induction ready and it really works well on an induction stovetop. However, combining the copper core pan with the magic of the induction stovetop burner can be tricky at first. So you must learn the ins and outs initially before jumping into it too quickly. But when you have mastered this art, you will really enjoy cooking on the induction burner. Although he didn’t know it at the time, but when John Ulam created All-Clad and the copper core cookware, he made something that would one day be a ‘marriageable cookware and burner’ combo that would work magically together one day in the future.Because of the weight of the pan, it comes with a helper’s handle which is very unusual on a 3-qt. S saucepan. But you will quickly find that without it pouring anything from it with one arm and hand would be almost impossible. Again, thank you John Ulam and the QR team at All-Clad.The only negative thing I have found re this beautiful pan is in regards to the handle. But I don’t know if it could have a better handle. It’s somewhat uncomfortable to hold with one hand. Even empty, it’s heavy. The handle on top is open. Although the edges are nicely rounded the weight of the pan still pulls down causing the top edges of the handle to ‘cut’ into one’s hand. It doesn’t hurt, just uncomfortable to hold. The closer to the pan one holds it the more comfortable it becomes but the hotter the handle can be. So if you can, use the helper’s handle if possible. If All-Clad had put a totally rounded handle on this pan in order to make a more comfortable feel, the pan would have become more dangerous to hold because it would be more slippery when filled with food. And this is the reason, I believe, that there is the open-top designed handle on All-Clad saucepans.All All-Clad cookware are phenoms as most everyone is aware. But the copper core line, in my opinion, is the cream of the crop. The best of the best if you will. Shy of cooking on cookware made of all copper that is tin-lined, and with the exception of all sterling silver cookware—yes it is made but very, very expensive such as $3,500-$4,000 for an 8” skillet—stainless steel cookware with a thick copper core tucked in between two cores of aluminum (aluminium to you Brits) is the best to cook on.Simply stated, All-Clad cookware, specifically this 3-quart copper core saucepan, is the best, hands down. Highly recommended. Go ahead. Spend the money. You won’t regret it.

Ramps up the joy of cooking!
This is my third separately purchased copper core All-Clad cookware item. I was thrilled when I opened the box and grabbed the handle to pick it up. I enjoy the entire process of cooking, from viewing the pots and pans on my hanging rack to choosing the foods I prepare in them. It makes things taste better, don't you think? Like playing HOUSE when I was a little girl, simple pleasures add to life experiences.The three-quart saucepan was less costly than the smaller ones. So, I chose the three-quart. It is balanced in my hand, full or empty, keeps a cool handle on pot and lid, just like the other All-Clad items. I am proud to hang it beside the cooking area of my open kitchen. Good tools, regardless of cost, always make the work easier.If you are shopping for gifts, consider All-Clad. What a way to say "I love you" every time the recipient looks at your gift.

Only way to go!
All clad copper core is the only way to go. Yes, it is pricey, but it does not develop “hot spots” like some of the less expensive products. I must admit it is a bit heavy when you first pick it up, but you get used to it. And I LOVE the little copper ring around it. So far, it has not stained, and cleans up nicely in my dishwasher. My children are already eyeing it for inheritance purposes. I buy these one at a time as a full set would be too costly, and I really don’t like all the pieces in larger sets. I have used copper core on my boat, too. For the size that it is, I have no complaints.

Love this stainless steel pot. It’s perfect for a medium batch of soup. There are just two people in our home, so no need to get the big pots out. The All-Clad brand is reliable and lasts for decades. Would buy again.
