To make Native Forest organic coconut cream, we press the meat of fresh organic coconuts, yielding an oil-rich extract that is mixed only with filtered water and a tiny amount (less than 1%) of organic guar gum from the seeds of the guar plant. **Q: Some have complained the texture is too watery than creamy. Does it have a genuine cream consistency?**
A: Mixed.  Some cans are ALL cream, some have a mix of cream and 'coconut water'.  Overall I am satisfied that I get mostly cream.  Since I use this in my coffee/tea preparations or soups, I am am okay with a more liquid texture from time to time though.  I also think of it as like cracking open a coconut, each experience is going to be slightly different, even nature doesn't get it perfect every single time.

**Q: I just received the coconut cream and nowhere on the can do I see BPA-free. So many reviews mention BPA-free. Am I missing something?**
A: I found this on Amazon's web page for Native Forest Coconut Cream. **Q: What is the difference with this coconut cream, premium and the native forest organic classic coconut milk?  i see the can size is smaller.**
A: I bought both. The milk separates into a thick heavy cream with water when cold. You can blend them to make it one thick cream/milk (easier to shake at room temp) or you can use the water based part in smoothies etc, and the cream as a cream for thickening, or whipping. The cream in the smaller can is just very dense cream to use as cream in recipes, and it also can be whipped like whipping cream when cold. Both are really delicious!

**Q: can you make whipped cream with this? Does it still need to separate or can you whip it all together?**
A: This works great - "Whipped 'Coconut' Cream"Put 1 can of Coconut Milk in refrigerator over night - or long enough to be really cold.Turn can upside down & open.  Pour out some of the liquid.  Empty the rest into a mixing bowl.Use an electric mixer to whip up the Coconut Milk. (Do NOT use a Blender - as it will just liquify).Add 1 tsp Vanilla then add Stevia, to taste.Whip enough to mix. I usually cook for myself, so this is the size I like. This product has not been sweetened. It's good coconut cream.

I am giving this a 5-star because I am grateful to have these delivered during these mandatory shelter-in-place times. In fact, I have reordered these a few times, use them for coconut-based ice cream and for coconut-based yogurt and for cooking. The first time I was shocked at how small the cans were (the size of a small can of tomato paste), because I am used to (and generally need to use) the larger cans from Whole Foods, so rather than use two-plus costly small coconut cream cans, I have gotten used to mixing one of these small coconut cream cans with one of (the same brand) large coconut milk cans, for whenever I am making something that used to use a large can of coconut cream. Dilutes it a bit of course, but for things like making yogurt that seems to do the trick! Means setting the yogurt maker to 14 hours instead of 10-12 though! These cans have been a godsend and I am grateful to have them. Thank you for making these available!
