if I get these caps and want to put together a blow off situation, what size food-grade tubing would I need to purchase for a tight seal?

The size that fits tightly on the cap? I would measure the nipple on the cap and buy tubing accordingly.

Will these caps hold a vacuum? Want to use it for degassing.

The fermenting lids I have are not the same as these. Mine would not hold a vacuum.

how do you syphon through the lid?

There are two holes in the lid one is for a air lock the other is for a racking cane or tube for siphoning. Both holes have caps to plug them.

Would this work for long term wine storage? (Decades)

I am not sure if this would work for decades. I have used it to condition beer after primary fermentation but for only 30 days. As long as you can keep oxygen out there shouldn’t be an issue. The major concern would be how tight the seal is with your carboy.
