My husband likes more potatoes and only a few carrots. I like more carrots. It works for just the 2 of us with enough leftovers for his lunch the next day. This is a wonderful tasting curry. We prefer the hot. Also, something to keep in mind, when this cools down, the color will change and it's a sort of green. It is still just as tasty, but if you aren't expecting the color to change the next day, it is normal, or it is for my family. Enjoy this.
