The warning label on our package is a requirement for California to comply with the notice requirements of Proposition 65. The notice requirement applies only to California and not to any of the other 49 states or the federal government. Acrylamide is a natural result of the roasting process and other high heat processing such as baking potatoes or cooking French fries. It is not added to our goods, simply a natural result. Coffee companies are currently challenging the requirement for this notice, but until then, we have decided to provide the notice. Unroll bag and just cut one corner with scissors to form a mouth. Pour about 1 pound at a time into an airtight container, leaving the rest in the bag. Fold mouth part in, and duct tape shut. That's how I've done it for the past 2 years. Simple and efficient. Also, from everything I know about coffee beans, refrigerator storage is not recommended as it dries out the bean.

It is dark and rich. Comparable to French roast. Wonderful taste. I like this coffee better than Starbucks and the other retail chains. Really good cups of coffee.
