This is one of the ingredients (good quality butter is also very important) that makes baked goods taste so much better than using store bought brown sugar. It adds more depth of flavor that makes home baked goods taste like something from a high end bakery.

Very dark brown sugar - delicious!
I've been buying Billington's since I first saw it on a grocer's shelf. Its high molasses content gives it a unique flavor, adding to hot cereals and recipes that call for brown sugar. It gets rock hard, but if you store it on an airtight container with a damp paper towel for about a week, it softens up and is very easy to use.

amazing flavor
My husband and I first discovered this sugar 20 years ago while working in England. We've had it in our house ever since. We use it when baking certain things like Molasses or ginger cookies. It gives that richness without being overly sweet. It's also delicious on oatmeal and even in coffee. We will never be without it.

Amazon to the Rescue!
Amazon to the rescue once again! I've been buying this sugar at my health food store for about $4 for a one-pound bag, and now they haven't had it for months and neither has anyone else in my area. Amazon's price works out to half that, if you adjust your order to get free shipping or are a Prime member.Billington's "Natural Dark Brown Molasses" sugar is better -- much better-- than any other kind I've tried. Its wonderful clean flavor is completely different from the rank flavor of other brands of "dark brown" sugars I've tried. The flavor is reminiscent of maple sugar, perhaps. Another reviewer suggests "toffee." Whatever the flavor is, the sugar is great on oatmeal, great to bake with, and I wouldn't think of making Linda Greenlaw's maple baked beans without it. (The best and easiest baked beans ever, my most-used recipe from her book RECIPES FROM A VERY SMALL ISLAND)Cookies, spice cakes, gingerbreads, and anything else with dark brown sugar for an ingredient are a whole different concoction with this sugar. Even Sticky Chicken Wings, baked swimming in half soy sauce and half dark brown sugar, taste better with Billington's. (There's a bit of mustard and butter in the sauce too, but you can taste the Billington's difference through it all.)The sugar is in a box, packed very tightly into the inner bag (a perfect presentation for a gift: the box is bright and attractive). I can understand how the sugar might collapse into itself and cool into the hard brick one reviewer complained of, if it sat for a long time in a shipper's superhot warehouse. I revive hardened sugar in a double bag system (sugar in the inner bag, top slightly open, an outer bag that I'll seal tightly, with a barely damp paper towel folded several times between the two), and I think I'd try this before sending a shipment back.The other Billington sugars are very good too. If I were less anti-sugar and did more baking I'd consider ordering the three kinds together. An assortment of the three would make a great gift for my baking relatives.

UPDATE: bought this 10-pack three years ago and kept all boxes in the freezer. just opened box 5 but am moving through it more quickly now that I have a zojirushi-mini bread machine (also from amazon, and my best purchase in years). this molasses sugar is fantastic for boosting the yeast in the bread machine! and for use in things like banana bread. this is the only sugar I use, period, and I'll be ordering again when I open box 10. kept in the freezer there has been no "degradation" or loss of any kind. this stuff is amazing...This dark-brown sugar is fantastic, and I probably now have a lifetime supply since I don't bake sweets very often. Just wanted it on hand and keep it in the freezer because I don't mind using a chisel on it. It's like rock candy that way; nice for an occasional treat. Plan to use it for fruit/nut and ginger breads. Softens up easily enough when necessary. SWEET! And rich, deep, dark, wonderful, etc....

Molasses sugar
It is what it says - molasses sugar. To me it tastes more like molasses than brown sugar, which I suppose is a good thing if one happens to like the taste of molasses. The label says "NATURAL Dark Brown Molasses Sugar" and it is indeed a very dark brown, much darker than the C&H "dark brown" I am used to, but it would be a mistake to expect this sugar to taste like regular brown sugar only more so. Rather, it tastes much like molasses, perhaps with a hint of a brown sugar undertone. Not what I yearn to put on my oatmeal in the morning, but I AM fond of molasses cookies as I recall - guess I need to dig out my wife's recipe.The 10 1-Lb packages were nicely packed, the sugar inside each 1-Lb box wrapped in plastic film rather than wax paper. The shipment arrived in only a couple of days even though I selected the free super-saver shipping.
