Can the front bunks be adjusted to more of a deep vee?

NO. It is very minimal and limiting. If I had to buy again I wouldn't purchase for what I have. My kids use it for their 14 foot sailboat, the trailer sits high and the wheels have issues. the unit floats a lot and tricky to get under boat to get out of the water. Price point is what you get compared to other hand trailers
