how many gallons is this tank? (12"x7"x9")

I am assuming it's about 1 gallon. It's a very good enclosure. I keep a 2" juvenile B. emila in it. It's easy to keep clean, doesn't scratch like acrylic since it's PVC. It stacks well. I plan to purchase a few more of the larger sizes.

Is it difficult to open the safety lock?

I never used that. The top itself is quite secure when closed

Is this mesh or punched steel?

Steel mesh. Just watch out for the water bottle hole in the top if you have anything small My jumping spider escaped

Do they stack if yo buy multiples?

Yes but then you would lose the air from the top and would only have the air from the sides. Also there is nothing to make it “grippy” so you would want to put it it a secure place so it didn’t slide around
