Excellent for pasta and baking
This flour mixed with egg, rolled thin and boiled made a very good quality wheat free pasta that tasted like whole grain and had a perfect pasta texture and strength. It also made good quick breads as long as egg was added to help it hold the bubbles to rise while baking. It made very tender and soft cookies as well.
