I would suggest you run it for about 2 to 3 hours and test it. Once it gets to the stage you like, write a note in your little manual somewhere so you know how long to run it the next time for that item. **Q: Where can I purchase 4 more fruit leather trays?** A: Not sure about where to get them but in the past I learned that you can do fruit leather easily if you have a gas stove. The only thing i don't like is that this model doesnt have a damper on top of the lid, it is just wide open with no way of damming the heat escaping, so I installed a KN90 mask on top, then I control how much air comes out.
