Do you see that little lever on the side? All taps should have that. It's a flow regulator. If it's coming out too fast and foaming, you can slow the flow down. I sometimes use this unit to carbonate white wine (make bubbly chardonnay) so I fill it 3/4 full, and crank up the pressure to the max, lay on its side in the fridge overnight. You lay on its side to get more surface area to let the CO2 be absorbed into the wine. To dispense, leave the pressure on high and turn down the flow rate to get bubbly white wine for family Sunday brunch.
