Q: How is this ink against water? (i.e. water paints, gouache, etc)

Most fountain pen inks are not water resistant, and they will readily dissolve when they make contact with water. This is because water soluble inks are generally safer for the pens themselves. Liquid paints like watercolor and gouache will also dissolve the ink. That can be an advantage if you want to tint out washes and blend with the fountain pen ink, but if you want to maintain clean lines and apply other paints over the fountain pen ink, that won't work. There are a few very water resistant fountain pen inks, but even the most water resistant will smear if you brush water or wet paint over them. If you want ink lines that won't budge, look at drawing inks or waterproof calligraphy inks meant for dip pens. For inks that are waterproof and brightly colored, check out acrylic drawing or calligraphy inks which usually dry completely waterproof.

Yes, if you have a larger supply of ink. For my part, I would save the hassle and just buy another of an easy to use ink already in the bottle.

Q: Does this ink contain Shellac? Is it waterproof?

Absolutely not. Shellac is the death of your fountain pen because chemicals that are solvents to shellac will also attack your nib, ink feeder or both, depending on both the solvent itself and if the feeder is ebonite or plastic.
