Hi, are all 3 bottles 8oz?

Thank you for your question. In order of main image, the left one is 5.8oz, the middle one is 8oz, and the right one is 5.3oz.

Do the dasher tops have small rubber caps to close them between uses or do you have to swap to the glass stopper to fully close the bottle?

Has a black rubber stopper and can switch tops to a glass stopper.

What size gold spouts could I buy for easier pours to fit these

Mine came with them but I also bought an addition gold spout that looks like an oil spout or a jigger spout

The cap can used for pouring syrup?

No, the dasher top cannot used for pouring syrup,it may be blocked.
