Maybe a stupid question but if you don't need the trim plate (if there's no hole to cover on the exterior) can you just not use the plate?

If there is no hole to cover the exterior then you should get Schlage B80 Single Sided Deadbolt, the B80 version doesn't need a exterior plate.

How would you unlock from other side?

You can only unlock this if you are inside your home. The solid part is on the outside of your door and the lock is inside your home.

Is this a complete deadbolt lock, or just the interior thumb latch?

It is the complete set including the deadbolt and hardware. It is one sided so it doesnt have a key. Just the interior latch to lock/unlock.
