Is it suitable and durable for a high humidity environment? Like a reptile Vivarium? Humidity could be between 70-80% on a consistent basis.

If the climatic conditions around the device are within the manufacturers normal operating range, I would expect the device to operate satisfactorily. In my opinion, the 70 - 80% humidity range should be ok.

How can I manually calibrate this for better accuracy? It says in the listing description this is a feature but I cannot work out how to do it.

Calibrated mine but I can't find instructions at the moment. It was easy and straight forward using the + and - buttons. Sorry can't remember the sequence. Just tried and I think you press set button until it flashes and then up or down button to alter . Then leave untill it settles.
