Can the temperature be detected up to 500°C?

Dear Customer:We recommend the usual use of temperature within 400℃，a short period of time can be up to 500℃，but it is easy to damage it over time.

what kind of stainless steel is the probe material? and is it water proof?

It appears to be a quality instrument stainless steel is of unknown grade but almost all stainless steels are good and the only problem I had was a deviation from standard calibration temperatures by a few degrees unsure if that was an inherent thing or just measurement error but I had a pretty good quality setup while measuring.

How is the sensitivity？

i have mine pid operating +/- 2*c
