What would I use the clef knife for vs the chef/santoku?

Great question! The Clef knife marries the precision of a chef’s knife with the utility of a cleaver, featuring both a perfectly tapered edge with a wide surface area perfect for scooping up freshly-chopped ingredients.

What is the bevel angle?

Well unless you are doing the manual angle yourself it’s about 13-15 degrees. However I suggest mimicking the angle on this knife the best way to do this is with a sharpie. Run the side of the sharpie on the grind edge on both sides and sharpen until the sharpie is gone. The work your burr and leather strap for the finishing touches. I recommend doing this with all of you knifes unless you are confident in doing a correct convex edge. Anyway saber grinds with a micro edge are great for king Chen knife edges. Also a side note avoid the tough steels for kitchen knifes. Just gone or strap your edge b4 every use and you will be good!
