By far the best quality Guanciale you can get. Perfect balance of fat to meat, renders down nicely and has just the right amount of salt for making an authentic Carbonara.

I expected much better quality - very chewy, almost unedible.For these money I expected something much better.

I wanted a good Guanciale for an Italian dinner for family as I was making Spaghetti Carbonara. I like to stick to traditional recipes when pasta, so no cream, no garlic, no pancetta no Parmesan cheese. I cut up into nice little strips, cooked the Guanciale over low heat so I could get the oil I would need for the pasta and bring the flavor out in the Guanciale as I have done before. Well the flavor was not there with this Guanciale. I am not saying it tasted bad, it just didn't have the taste I was expecting to taste and other family members said the same thing.Next time I need to buy Guanciale for a pasta, I will look elsewhere and hope I get something better suited to my taste buds.

This guanciale is awful. It’s very tough, bad tasting and appears not to have been prepared properly. The package states it was cured with sodium nitrite and potassium nitrate which are not the traditional curing agents used to prepare guanciale in Italy.

The piece I received had a barely any meat, much less than the picture

Did not arrive packaged cold. Looks spoiled.

I've been trying to find good guanciale in Hawaii, with no luck, in love with this, thank you very much
