I've been looking for a cheese plane to replace/supplement the one I purchased over 40 years ago at a Hickory Farms shop for years now and every one has been a disappointment. This one is not. The shape is nearly identical and it actually stayed in the cut, creating a nice, thin, even slice. It has some nonstick metal treatment and diamond dimpling on the flat portion to assist in slicing and release that the old one doesn't have or need but that is irrelevant. It actually works about 95% as well as the old one. I used one of the imposters that creates a rippled surface on a block of cheese and tried to smooth it out with this plane. It made it better but couldn't remove the ripples within a few slices whereas the old one can make a smooth surface again in one or 2 swipes. Still, I'm quite happy with this find and the results.I'd give it 4.5 stars if I could but am rounding up here because it deserves better than 4 stars. The weight and feel is very nice and it appears to be quite sturdy and looks really nice. I won't be around to see if it survives 40+ years, but perhaps one of my kids will.

Excellent. Cuts well. The cheese must not be too thin for the tool to work, say half an inch. A little less if the cheese is of a very firm tecture.
