How good is the knife against cutting the simpliest things like veggies? Im looking for an all purpose clever if its possible.

This is way over kill for veggies. Extremely heavy and thick cleaver knife. Unless thats your thing ? But, it is heavy and 1/4 " thick across the spine. Almost like a hatchet.

Sure will, and if you swing it hard enough it will cut your arm off.

Has anyone used this to dispatch a large turkey? Is it sturdy enough to take a mallet to assist in removing head from neck quick and clean?

This is my favorite go to in the kitchen It’s sturdy and heavy enough to cleave the turkey’s neck with out a mallet and with ease. It’s nicely balanced and I use it to cut about every thing in the kitchen. I was able to lop of the head of a large pig with three good hits
