The best rice ever
Mutton Biryani, a staple at festive gatherings, offers a sensory journey like no other. The dish starts with the highest quality basmati rice, known for its long, slender grains that cook to perfect fluffiness, retaining a distinct texture that’s neither mushy nor too firm. The rice is layered with richly marinated mutton, which has been slow-cooked to achieve an almost buttery tenderness. The spices in Mutton Biryani are the heart of its magic. A melange of cinnamon, cardamom, cloves, bay leaves, and nutmeg, along with a generous helping of turmeric and red chili powder, envelops the dish in a warm, inviting aroma that is both exhilarating and comforting. The use of saffron adds an exquisite color and a subtle complexity that elevates the dish further.Every bite of Mutton Biryani is a delightful mix of flavors and textures: the softness of the mutton, the firmness of the rice, and the crunch from fried onions sprinkled on top. The accompaniments—typically raita (a yogurt-based condiment), boiled egg, and salad—complement the richness of the biryani, providing a refreshing contrast.Overall, Mutton Biryani is not just a dish; it’s a celebration on a plate. Whether enjoyed in a humble home kitchen or a lavish restaurant, it remains a testament to the depth and diversity of culinary traditions, making it a must-try for anyone seeking to experience the pinnacle of flavor craftsmanship.

Amazing! Great Red Chili Heat!
My last purchase of “butter chicken” seasoning mix was from Amazon and then the Simply Asia brand was discontinued. The Shan Butter Chicken seasoning mix is truly amazing and preferable to Simply Asia. It has great flavor and good strong heat from red chili pepper. The seasoning mix is imported from Pakistan and has twice the amount of product in the packet than Simply Asia (50 grams as opposed to 25 grams) which makes a tremendous difference in flavor and consistency. The cooking instructions on the package are straightforward and I prepped everything the night before so it was just a matter of assembling the ingredients the next day. We served it with Madras Lentils (also purchased on Amazon), Basmati rice and Na’an. Excellent. One seasoning packet was sufficient to make a meal that served four adults and in terms of cost (I purchased the six-pack) that one seasoning packet was about $2.50. This excellent seasoning mix continues to be more practical and less expensive than purchasing a simmer sauce in a glass jar that costs substantially more and could possibly break in transit (and then is often not returnable). The Shan seasoning mix is definitely worth getting.

Tasty, but very hot
Enjoying the first pack. The wife added extra meat and veg. I do like things hot and spicy. This was a test even for me. Abig blob of yogurt helped. Reheating Leftovers always intensifies things a bit so 2nd time around served over potatoes with vinegar added and yogurt on top. Still intense, but OH, so good. Next use will see just a half package used.

I used this to cook biryani for my Indian colleagues and got lots of thumbs up
After traveling to India on business I got serious about learning how to make my own. One of my colleagues recommended this spice blend and it is much easier than making my own masala (although I do have the spice grinder for it). Mild to medium for my Indian colleagues. I use half the packet mixed with plain greek yogurt to marinate the chopped chicken thighs and breasts overnight.Deep fry two thinly sliced onions until golden and crispy in 1 cup of vegetable oil and drain on paper. Reserve the now flavored oil.Chop a bunch of fresh cilantro and a bunch of fresh mint and hold on the side.Bloom a good pinch of saffron in ghee or milk.Brown the chicken in 1/4 cup of the onion-frying oil, when it is almost ready,Put another 1/4 cup of the onion-frying oil into your Instant Pot and put on saute - bloom the remaining contents of the spice packet in the oil for a minute or two (keep your face out of the vapor). Hit stop.Put the browned chicken pieces into the bloomed spices and stir.Sprinkle a good sized handfull of chopped cilantro and mint on top of the chickenSprinkle a good sized handfull of crispy onions on top of thatAdd your RINSED basmati rice as another layer - do not stirCarefully add chicken stock until you reach the top of the rice (the entire mixture should be just submerged in stock)Add 6 green cardamom pods, drizzle the saffron and ghee on top.Put on the lid of the Instant PotHit the RICE buttonCook until it beeps, and allow to stay on low until the pressure releases naturally.Serve with raita and lemon wedges.
