Does it all have to be used at once, or can it be stored?

Until the two parts are mixed, it can be stored for a long time. I recently mixed and applied some that was about 5 years old, and it worked as well as when newly purchased.

Does it work with Particle Board?

Should work fine on particle board. Forms a soft putty (think playdough) that can be formed to any shape. Dries rock hard, is sandable and paintable after drying.

Is the date on the container manufactured date or expiration date?

It is probably the manufacture date unless it says Exp. in front of the stamped date I am surmising, as I have already used the product and don’t have the containers nearby. I used 1/2 of each container on my beach house exterior utility room doors. Worked great. I saved the rest but I don’t have the containers nearby to even see if they have dried up
