Q: On my 2nd and 3rd batches of sauerkraut, there is little water in the "moat" in the morning and then by early eve, it overflows and spills out. help?

This is probably due to negative pressure in the pot pulling most of the water up under the lid. When you add water it is forcing the water into the pot. Instead, when the water is low in the moat, just turn the lid a little and the pressure will release and the water will fill the moat again. Thank you for asking VeggieSensations. The most I would put in at a time is 15 Pounds. I usually make it in 5 pound increments as it is easy to calculate recipe salt.3 tbsp sea salt per 5 pound cabbage is a good measureMake sure you have at least 2 inches of liquid over cabbageThis will make approx 14 Pints depending on how tight you pack it.I suggest you pack it moderate tight and make sure you have plenty juice within the jar.

I am not sure what a follower weight is but the crock comes with weights.
